Fougere Workshop

Create the scent of the forrest floor.
There has been some interest amongst a small group of students in doing another Fougere Workshop.  I'm so happy to teach this class again on Sunday, April 12th, 1-4pm.

Fougere is a fragrance family that came into fashion towards the end of the 19th C.  The word means fern, which makes it a fantasy category seeing how ferns don't really have a fragrance.  Fougere's are meant to smell like the forrest floor and, to my understanding, must have three ingredients:  lavender, oakmoss and a coumarin note (found in tonka bean, hay, sweet clover, etc.).  Often herbs like geranium, linalool rich rosewood and more assertive notes like patchouli are added but it's the careful consideration of the other ingredients that makes the fougere your own.

In class we'll explore the genre and sample many perfumes including the original Fougere Royale and Jicky - the vanguards of the classification -  along with samples from some of the best natural perfumers working today. You'll be choosing from materials like tonka bean, sweet clover, concretes of lavender, geranium and clary sage, several lavender absolutes and essential oils, cedarmoss, cassia and ho wood.  You'll have the opportunity to create two perfumes.  $25 extra to make a third, time considering.

New Perfume! Foret de la Mer, a Fougere for Men

Fougere's have been my passion for the past couple of years and the last time I was in California I was inspired to create one based on the expansive coastline rimmed with forests. This is a bolder and more voluptuous fragrance than I normally create but I was so moved by the drama of the natural surroundings that I wanted to try to capture it in a bottle. I became haunted by the smokey, maritime essence of choya nak, a destructive distillation of roasted seashells, and was compelled to use it in the base which gave it a definite masculine feel. I personally love men's fragrances and have been wanting to make one for some time. The result, Foret de la Mer (Forest of the Sea) is a mossy, maritime fragrance with luscious florals and fresh citruses.  It's more bracing than what I normally go for, and sometimes the smokey seashell seems nearly too much, but I'm always glad I stayed with it.  It really changes in the drydown and that smokiness turns sweeter.  It's weird, and that's partly what appeals to me about it.

The traditional fougere ingredients, tonka and oakmoss, sit at the bottom with ambrette seed and choya nak. Champaca absolute and orange blossom concrete mingle with French lavender absolute to create a sumptuous floral heart. Wild lavender essential oil blends beautifully with bergamot and wild sweet lavender to greet the nose in a tangy floral welcome.  It's bracing at first but gives way to sexy champaca and a surprisingly sweet dry down.

I've been thoroughly enjoying teaching out of my home studio. The classes are more intimate and I have all of my materials at hand for every need.  


Saturday, March 7th
1 - 4pm
In this first workshop we will take a closer look at the artisanal art of natural perfumery. Students will gain a basic understanding of the sense of smell, the history of perfume, the advent of synthetic ingredients and the return to naturals.  Perfume ingredients and formulation will be explored and each participant will leave with two bottles of their own bespoke perfume.

For those students who have taken the first Natural Perfume Blending course and would like to study further I'm now offering Perfume Blending, Part Two. The original kit of 50 or so oils will be added to with some rare and precious oils such as hay absolute, magnolia flower, yuzu and pink pepper. A more in depth look at formulation and structure and becoming more intimate with your materials will be explored and there will be specific assignments to deepen your understanding of blending and perfume creation, as well as sharpen your sense of smell.

Fougere Workshop

Home Studio Classes

It's official.  I've begun teaching small groups in my cozy and intimate home studio.  I've been wanting to teach here for many years and the surprise closing of 3rd Ward last month deemed it time to begin.  I taught a beginner's class a few weeks ago but this past Saturday I taught my Fougere Workshop, the one I've been talking about for months now.

It's no secret that I've been fascinated by fougere's and the delightful and enticing molecule, coumarin, for some time now.  I'm a natural born researcher so when I set out to make my first creation (which turned out to be Sol de la Foret) I had to do my homework first and read up on it.  I began to send for samples of some of the original fougere's, notably Fougere Royale by Houbigant and Jicky by Guerlain, and also from some of the natural perfume world's best perfumers who've made a perfume in this classification.  As I compiled information, both factually and sensorily, I realized that I had the makings of a great workshop devoted specifically to this genre.

After taking in the samples and getting an idea of the generalities of a fougere and the wide breadth of different varieties we explored the materials in a little more depth.  Tonka bean, hay absolute, sweet clover absolute, oak moss, cedar moss, ho wood and cassia as well as a selection of lavender essential oils, absolutes and concretes were introduced.  At this point the students set out to make their own quintessential fougere.  After a little gentle critiquing of their creations we went further and discussed the different classifications more in depth (amber, floral, fresh, leather, oriental and precious wood fougere's).  A few new materials were introduced such as davana, buddahwood, ambrette, choya nak, aglaia and magnolia and then the students set out to create their second perfume.

The class was such a success and the students so enthusiastic that I broached the subject of a salon series meeting semi-regularly to break down the fragrance classifications.  The group was so enamored of the choya nak (a destructive distillation of roasted seashells) that the conversation kept turning to leather notes.   They were excited about the notion of an exploration in leather perfumes so I can see I have my work cut out for me with my next research project.  My head is already spinning with images of 16th Century Parisian glove makers using gorgeous florals to cover up the smell of animal skin.  Smokey cade, birch, myrtle, styrax...  Expect a leather perfume to follow!

Sol de la Foret

Sol de la Foret, my newest fragrance, is a true labor of love.  After falling head over heals with the fragrance family, fougere, I set out to make my own.  To be a true fougere a perfume must contain a coumarin note, oakmoss and lavender.  Coumarin was the first synthetic chemical created in a laboratory in 1886 and was the principal ingredient in Houbigant's Fougere Royale, since considered the industry standard.  Coumarins are found in abundance in materials like tonka bean, sweet clover, flouve and deertongue.  It is also found, rather surprisingly, in lavender.

For this creation I've used a generous amount of rich caramelic tonka bean.  To give it a greener, mossier and more coumaranic note I also added sweet clover, a new favorite of mine.  I used a bit of fossilized amber, a tree resin that is millions of years old from  high in the Himalayan Mountains, in the bottom to add a dry smokey quality to the earth element of the blend.  It dries down very soft and sweetens adding a slight powdery note at the bottom - along with great fixation.  Tobacco and Vanilla CO2 add some warmth to the whole bottom.  Following the rules of the true genre there is also the addition of oakmoss, adding a wet roots and leaves note to the forrest floor.  Those sensitive to oakmoss be warned.

At the heart of the perfume is a lovely synergy of carnation and lavender absoutes with a touch of clary sage and orange blossom concretes.  Tunisian neroli was a perfect match for high linalool ho wood at the top, with just a drop of blood orange.

This perfume comes beautifully packaged in a brown velvet envelope in a gold box with a vintage velvet millinery leaf nestled inside.  No markings of any kind have been made to the box or velvet envelope so that they bay be reused (or regifted as the case may be).  The leaf is your keepsake, that and the lingering fragrance.

New Colognes

This season's colognes are finally brewed, filtered, bottled and labeled.  I'm pleased with the way they turned out this year.  The new influx of materials was a joy to work with.

I started the project by individually tincturing the dry materials to see/smell what they do on their own.  Then I was able to blend with more confidence.  After doing research on old cologne formulary and coming up with some ideas of my own I set about working my ideas out on paper.  I knew I wanted to do a fougere and I've always wanted to make something called Swamp Water.  The new fragrances are:

Foret de Fougere:  Lately I've fallen in love with the fragrance family fougere. French for fern, fougeres are meant to replicate the scent of the forest floor (ferns don't actually have a scent of their own). To be a true fougere there must be three notes - lavender, oakmoss and some kind of coumarin (the molecule responsible for the sweet caramel note in tonka beans, hay and sweet woodruff). Oakmoss is a little tough to come by in its natural state but the coumarin note was accomplished by sweet woodruff and tonka beans and accented with vanilla beans and patchouli. Jasmine forms the heart of this fragrance with lavender and cassia in the top. I'm really happy with the way this one came out, it may be my favorite of all the cologne experiments.

L'eau du Who:  L'eau du Who is inspired by the classic cologne, 4711. After a little research I came up with an approximate formula for the cologne and broke it down into something akin. Patchouli leaves, vetiver roots and sandalwood powder form the base while jasmine, rose buds and peach tea create the heart, finished with meyer lemon, minneola tangerine and orange peel combined with basil and lemon verbena. I named it after my guitar hero, Pete Townshend of the Who, who reportedly wore it before his shows.

Swamp Water:  Swamp Water is an idea I came up with long ago when fantasizing about the bayou. I saw grasses swaying in the breeze, the night air thick with heavy florals, a refreshing glass of tea with herbs. Vetiver, the roots of a grass, and sweetgrass combine with sandalwood to form the base while jasmine, meadowsweet and lavender bring in the heart. Swirling on top are jasmine tea, orange peel and lemon verbena.

Meadowsweet:  This cologne could easily be called Honey Water as it is as sweet as nectar. Meadowsweet and linden blossoms sit atop crushed tonka beans and sandalwood with lemon verbena gracing the top.

Terroir:  Terroir is the term used to describe the special set of characteristics that the geography, geology and climate of a certain place, interacting with the plant's genetics, express in agricultural products. Most of the herbs and flowers used in this potion are locally grown and harvested myself. Sweet woodruff, which grows in my herb garden, is supplanted with orris root and sweetgrass to form the bottom chord. Freshly harvested linden blossoms and pink and white roses form the heart, with home grown lemon verbena, tarragon and sweet annie on top. It has a sweet earthy lushness, Brooklyn grown.

Time Again to Tincture

I don't know what it is about summer but it's then that I start trying to capture the fragrances around me in tinctured form.  Maybe it's because I prefer lighter fragrances in the summer, when I switch from heavy perfumes to a splash of cologne instead.  There's something old fashioned about an after bath splash and I thought so even as a teenager in the 70's with the lilac cologne I liberally applied after each nightly bath.

Last summer I had some very good luck tincturing some of the dried herbs, flowers, roots, barks and berries that I've been collecting.  Over the past year I've collected quite a bit more plant material to experiment with.  I've not only collected plants in the park and from my community garden but also collected some from a couple of reputable herb companies.  The first was Dandelion Botanical Company.  My original intent with this order was the accumulation of the necessary ingredients for making bitters.  Not surprisingly I couldn't resist ordering a few other scented materials such as osmanthus flowers and sarasparilla bark.  Recently I received another order of herbs from Mountain Rose Herbs, a package I waited anxiously for which included such luxuries as tonka beans and meadowsweet blossoms.

Another heat wave had me conjuring up cooling and fragrant elixirs to calm the heat-addled spirits.  My new materials had me quite inspired and I made a list of them categorizing them by top, middle and bottom note, just as I would if I were making a perfume.  From there I jotted down some ideas and began blending.  My mortar and pestle were put to good use (that always makes me feel like a real apothecary).  They've been brewing for a month now and today they're being strained off and I'll soon be bottling them up for sale.

My favorite so far is Swamp Water which I dreamt up thinking about the bayou and tall grasses, night air thick with heady florals and sweet tea.  I also made a fougere, my latest obsession, using sweet woodruff, tonka beans, patchouli, jasmine, cassia and lavender.  Eau de la Who is inspired by my guitar hero, Pete Townshend, who I learned wore the classic 4711 when he went onstage.  I plan on sending him some.

Fougere

I've fallen in love with a fragrance family, the fougere.  French for fern, fougere is a fantasy concept meant to capture the scent of the natural habitat of ferns - the forest floor.  The principal notes in a fougere are oakmoss, tonka bean and lavender.

The first fougere was Fougere Royale by Houbigant, created in 1882, and spurred a whole new perfume category.  While it's probable that these fragrant chords were popular before the release of Fougere Royale, the fragrance captured a moment in time and has forever become linked with it's origination.  Houbigant was the first house to develop a scent chemical meant to replicate the scent of fresh mown hay, otherwise known as coumarin.  Coumarin is present in tonka beans, hay, sweet clover, sweet woodruff, sweetgrass, flouve and deertounge and in lesser degrees lavender, cassia, cherries, strawberries and apricots.  It is an overall pleasant odor reminiscent of sweet grass with vanilla overtones.

Jicky by Guerlain was created soon after in 1889 and it has notes of lavender, rosemary, bergamot,  opoponax, precious woods, vanilla, and tonka bean.


Fougere captured the imagination of perfumers who used tonka, oakmoss and lavender as a base to create new versions of the concept.  Often the base is supplemented by patchouli, vetiver, sandalwood and myrrh.  Often there is a rosy heart supported by geranium and clary sage, jasmine and orange blossom with top notes of lavender, rosewood, citrus, rosemary and bergamot.  There are sub-categories of floral, fresh, oriental, amber, leather and precious wood fougeres.

I'm hosting a fougere workshop in my home atelier on Saturday, July 27th.  We'll be sampling Fougere Royale, Jicky and a careful selection of fragrances by some of the botanical perfume world's best perfumers including Dawn Spencer Hurwitz, Charna Ethier, Ayala Moriel and others.  Each participant will get to create two perfumes using an assortment of oils I've collected just for the occasion.  Tonka bean, sweet clover and hay absolute will be on hand along with several lavender absolutes and essential oils.  This will be an opportunity to experiment with a few rare and precious oils like orris, ambrette, choya nak, ho wood, buddahwood and wild sweet orange.

A Nice Review of my Perfume Blending Class

A young woman approached me after my last Natural Perfume Blending class at 3rd Ward who had been sent to take the class from Brooklyn Magazine.  She had a few of questions and we exchanged contact info.  I was so incredibly delighted to read the review she sent me today from their blog.

I was most pleased to read that "Everyone in the class was really engaged and took notes and participated in the class in a way that was, frankly, really fun to be a part of", and that she though of me as "a lively, informative presence during the class, which she starts off with a history of perfume that manages to be both comprehensive and easy-to-follow for the novice.".  What I hope most about my classes is that they're informative and fun.  It's nice to receive some validation that I'm getting it right.



Sweet Woodruff

About ten years ago I bought a sweet woodruff plant from the Greenmarket at Grand Army Plaza in Brooklyn.  I put it in the postage stamp garden in the front of my brownstone where it lived for a few years before I transplanted it to the newly renovated herb garden at 6/15 Green Community Garden.  The first spring that it came back in it's new spot I decided to try to make May Wine.  If memory serves I picked several blooming branches and twisted or wrung them out to bruise them and stuffed them into a bottle of German Rhine wine.  Then I recorked the bottle and let it sit for about a week before I filtered and drank it.  I remember loving it, the woodruff had added a green and sort of balsamic note to the sweet wine.

The wine was meant to be drunk on May Day and I never got the timing right again and so never made it again.  It's a shame that I denied myself all those years simply because I couldn't drink it on the actual day.  This year, with spring coming early, I had a chance to catch it in time, not to make May Wine, but to make liqueur.

Sweet Woodruff (Asperula odorata) was used as a medicine in the Middle Ages, mostly as either a poltice for cuts and wounds or a strong decoction for stomach troubles.  It is known mostly for its sweet scent due to its high coumarin content, the chemical known for giving new mown hay its distinctive odor.  Bundles and garlands of woodruff were hung around the house in the heat of summer to "attemper the air, cool and make fresh the place, to the delight and comfort of such as are therein" and is reported to "make a man merry" according to Gerard.  The dried herb may also be kept among linens to sweeten them and protect them from insects.  It was also once used to stuff beds.

I've read that the coumarins in the plant don't come out until the plant dries.  I picked a small amount and left it to dry overnight on a parchment lined rack.  Right around the 24 hour mark I noticed that the leaves had taken on the distinct smell of fresh mown hay.  It was delicate but it was there.  I thought I'd leave it another day and see if it deepened.  The following morning the leaves had lost their scent almost entirely.  I picked another bunch and kept an eye on it around the 24 hour mark and began my maceration then.  I wrung it out much like I did with the wine and poured a cup of vodka over it.  The liquid began to take on a lovely pale green which deepened to the color of good fruity olive oil.  After two days I decanted it.  It tastes and smells of grass with a honeyed hay note.  I've made three successive batches.  I'd like to try sweetening some to make liqueur, and save some to add to the herb liqueur I'd like to make from the 6/15 Herb Garden this summer.  And of course some of it will be experimented with in Cocktail Lab.  I'll run out eventually but it will be just another thing to look forward to next spring.
