It's official.  I've begun teaching small groups in my cozy and intimate home studio.  I've been wanting to teach here for many years and the surprise closing of 3rd Ward last month deemed it time to begin.  I taught a beginner's class a few weeks ago but this past Saturday I taught my Fougere Workshop, the one I've been talking about for months now.

It's no secret that I've been fascinated by fougere's and the delightful and enticing molecule, coumarin, for some time now.  I'm a natural born researcher so when I set out to make my first creation (which turned out to be Sol de la Foret) I had to do my homework first and read up on it.  I began to send for samples of some of the original fougere's, notably Fougere Royale by Houbigant and Jicky by Guerlain, and also from some of the natural perfume world's best perfumers who've made a perfume in this classification.  As I compiled information, both factually and sensorily, I realized that I had the makings of a great workshop devoted specifically to this genre.

After taking in the samples and getting an idea of the generalities of a fougere and the wide breadth of different varieties we explored the materials in a little more depth.  Tonka bean, hay absolute, sweet clover absolute, oak moss, cedar moss, ho wood and cassia as well as a selection of lavender essential oils, absolutes and concretes were introduced.  At this point the students set out to make their own quintessential fougere.  After a little gentle critiquing of their creations we went further and discussed the different classifications more in depth (amber, floral, fresh, leather, oriental and precious wood fougere's).  A few new materials were introduced such as davana, buddahwood, ambrette, choya nak, aglaia and magnolia and then the students set out to create their second perfume.

The class was such a success and the students so enthusiastic that I broached the subject of a salon series meeting semi-regularly to break down the fragrance classifications.  The group was so enamored of the choya nak (a destructive distillation of roasted seashells) that the conversation kept turning to leather notes.   They were excited about the notion of an exploration in leather perfumes so I can see I have my work cut out for me with my next research project.  My head is already spinning with images of 16th Century Parisian glove makers using gorgeous florals to cover up the smell of animal skin.  Smokey cade, birch, myrtle, styrax...  Expect a leather perfume to follow!

New Colognes

This season's colognes are finally brewed, filtered, bottled and labeled.  I'm pleased with the way they turned out this year.  The new influx of materials was a joy to work with.

I started the project by individually tincturing the dry materials to see/smell what they do on their own.  Then I was able to blend with more confidence.  After doing research on old cologne formulary and coming up with some ideas of my own I set about working my ideas out on paper.  I knew I wanted to do a fougere and I've always wanted to make something called Swamp Water.  The new fragrances are:

Foret de Fougere:  Lately I've fallen in love with the fragrance family fougere. French for fern, fougeres are meant to replicate the scent of the forest floor (ferns don't actually have a scent of their own). To be a true fougere there must be three notes - lavender, oakmoss and some kind of coumarin (the molecule responsible for the sweet caramel note in tonka beans, hay and sweet woodruff). Oakmoss is a little tough to come by in its natural state but the coumarin note was accomplished by sweet woodruff and tonka beans and accented with vanilla beans and patchouli. Jasmine forms the heart of this fragrance with lavender and cassia in the top. I'm really happy with the way this one came out, it may be my favorite of all the cologne experiments.

L'eau du Who:  L'eau du Who is inspired by the classic cologne, 4711. After a little research I came up with an approximate formula for the cologne and broke it down into something akin. Patchouli leaves, vetiver roots and sandalwood powder form the base while jasmine, rose buds and peach tea create the heart, finished with meyer lemon, minneola tangerine and orange peel combined with basil and lemon verbena. I named it after my guitar hero, Pete Townshend of the Who, who reportedly wore it before his shows.

Swamp Water:  Swamp Water is an idea I came up with long ago when fantasizing about the bayou. I saw grasses swaying in the breeze, the night air thick with heavy florals, a refreshing glass of tea with herbs. Vetiver, the roots of a grass, and sweetgrass combine with sandalwood to form the base while jasmine, meadowsweet and lavender bring in the heart. Swirling on top are jasmine tea, orange peel and lemon verbena.

Meadowsweet:  This cologne could easily be called Honey Water as it is as sweet as nectar. Meadowsweet and linden blossoms sit atop crushed tonka beans and sandalwood with lemon verbena gracing the top.

Terroir:  Terroir is the term used to describe the special set of characteristics that the geography, geology and climate of a certain place, interacting with the plant's genetics, express in agricultural products. Most of the herbs and flowers used in this potion are locally grown and harvested myself. Sweet woodruff, which grows in my herb garden, is supplanted with orris root and sweetgrass to form the bottom chord. Freshly harvested linden blossoms and pink and white roses form the heart, with home grown lemon verbena, tarragon and sweet annie on top. It has a sweet earthy lushness, Brooklyn grown.

Time Again to Tincture

I don't know what it is about summer but it's then that I start trying to capture the fragrances around me in tinctured form.  Maybe it's because I prefer lighter fragrances in the summer, when I switch from heavy perfumes to a splash of cologne instead.  There's something old fashioned about an after bath splash and I thought so even as a teenager in the 70's with the lilac cologne I liberally applied after each nightly bath.

Last summer I had some very good luck tincturing some of the dried herbs, flowers, roots, barks and berries that I've been collecting.  Over the past year I've collected quite a bit more plant material to experiment with.  I've not only collected plants in the park and from my community garden but also collected some from a couple of reputable herb companies.  The first was Dandelion Botanical Company.  My original intent with this order was the accumulation of the necessary ingredients for making bitters.  Not surprisingly I couldn't resist ordering a few other scented materials such as osmanthus flowers and sarasparilla bark.  Recently I received another order of herbs from Mountain Rose Herbs, a package I waited anxiously for which included such luxuries as tonka beans and meadowsweet blossoms.

Another heat wave had me conjuring up cooling and fragrant elixirs to calm the heat-addled spirits.  My new materials had me quite inspired and I made a list of them categorizing them by top, middle and bottom note, just as I would if I were making a perfume.  From there I jotted down some ideas and began blending.  My mortar and pestle were put to good use (that always makes me feel like a real apothecary).  They've been brewing for a month now and today they're being strained off and I'll soon be bottling them up for sale.

My favorite so far is Swamp Water which I dreamt up thinking about the bayou and tall grasses, night air thick with heady florals and sweet tea.  I also made a fougere, my latest obsession, using sweet woodruff, tonka beans, patchouli, jasmine, cassia and lavender.  Eau de la Who is inspired by my guitar hero, Pete Townshend, who I learned wore the classic 4711 when he went onstage.  I plan on sending him some.

Midnight Garden

My newest perfume, Midnight Garden, is the joint creation of the lovely women of The Robert Allen Group and myself.  The Group has designed a new line of fabrics inspired by hanging orchids, twisting vines and hidden temples.  What they described to me was a rainforest, with orchids hanging in the trees, thick with fragrance in the night air.  Wild sweet orange, petitgrain and coriander CO2 greet the nose, sitting on top of a jasmine, neroli and honey heart.  At the bottom of this sultry midnight perfume is the vanilla orchid with peru balsam and oakmoss to finish.

More Cologne Experiments

I had such a great time making colognes this summer, and the results were so successful, that I tried my hand at a couple more.  The new brews, Fresh Mown Hay and Bay Rum, did not disappoint.

Fresh Mown Hay is a maceration of sweet woodruff (which is left to rest after harvesting in order to bring out it's distinctive hay like scent), orris root, benzoin, roses, vanilla, lemon verbena, linden blossoms and jasmine flowers.  The woodruff not only gives it it's signature scent but also considerable tenacity.  It is a rich, lush fragrance with an almost edible quality to it and conjures images of rolling in meadows.

Bay Rum was definitely inspired by the vast bay bushes lining most of the coastal areas in the New York area. I've been gathering them and cooking with them for many years and finally came around to making a fragrance. Over the summer I gathered leaves and dried them (I read they yield a better fragrance dried) and did my research on formulary and then started to experiment. Using the rinds of some mandarin oranges and freshly ground cinnamon, allspice and cloves I was able to replicate and expand on the traditional scent.

The results are in!  My experiments macerating dried flowers, roost, rinds and herbs are completed and I have detailed notes on the results.  After a month's time the liquor was strained off and clarified and then some were matched with hydrosols.  Certain recipes didn't work at all and were discarded but most of them yielded results.  I was really surprised by the tenacity of the different brews, some of them will last days on a tester strip. 

Summer Splash came as a real surprise.  The floral note that resulted from roses and lavender macerating with vetiver, sweet annie and orange peel was astonishing.  It was blended with lemon balm hydrosol to create a summery splash.  This one changes over time in a most interesting way.

Florida Water epitomizes summer for me. There is a large Latino community intermingled in my Brooklyn neighborhood and a lot of the pharmacies cater to this clientelle so are stocked with Florida Water. I have memories of my first years in Brooklyn discovering the pleasures of an evening shower followed with a splash of Florida Water. Orange blossom and clove are the distinctive notes in the cologne so I decided orange blossom hydrosol would be used with a maceration of meyer lemon rind, sweet woodruff, lavender, benzoin, cinnamon and clove. The results smell surprisingly like the water I used all those years ago, and I think it could be considered suitable for men as well as women.

Verbena Water is the result of macerating fresh lemon verbena and sweet woodruff from my garden, dried jasmine, linden blossoms and vanilla pods and then mixed with verbena hydrosol.  It's as fresh as it sounds, the softness of the woodruff and vanilla pared with lemon verbena counterbalance each other beautifully.

Rose Garden is a blend of dried roses, angelica root, jasmine, vanilla pods and lemon verbena which was then mixed with rosewater to create a veritable rose garden in a bottle.

Violet Water is the result of orris root, sweet woodruff, benzoin and jasmine marrying beautifully to create a woodland violet sort of fragrance which was then blended with cornflower water.  Violets contain a chemical called ionones which give them their characteristic fragrance.  Orris root, the dried and aged rhizome of the Iris pallida, also contains ionones but also has a woodland quality to it.  There are no violets in this blend so the name is merely a suggestion.

Each cologne is bottled in a one of a kind vintage glass bottle collected from the beaches of Brooklyn, NY. They've been scrubbed clean and sterilized but they're old and scratched to different degrees. Expect some wear from tumbling in the ocean for who knows how long.

Cologne Experiments

I'm having way too much fun riding out the heatwave researching old forumlary on the internet in search of cologne and toilet water recipes.  After years of collecting fragrant herbs, dried flowers, roots, powdered gums, tree resins, barks, citrus rinds and spices I wanted to see if macerating in vodka would produce results.  All of the old recipes I found used essential oils, absolutes and tinctures but I wanted to see what I could come up with with just the raw ingredients.

I've started two traditional cologne recipes, a violet water, something akin to 4711 and a Florida Water, as well as one true experiment.  It's been about ten days and I can already tell which ones have promise and staying power.  My plan is to let them sit for 30 days and then strain them off, filter them and let them settle.  Then I'll pour off the clear liquor and blend it with hydrosol.

When deciding on what to use for each experiment I'm still thinking like a perfumer and making sure I have top, middle and bottom notes.  I've been aging some orris root powder for a number of years now and it's developing a subtle sweetness that I hope the tincuring will release.  I also have powdered benzoin, cedar bark, vanilla pods and vetiver roots to play with.  Dried roses and lavender make up the bulk of the heart note but I'm also using a generous supply of jasmine sambac flowers that I've dried over the past year.  The linden blossoms that I collected last year have found their way into one as well.  For top notes I have citrus rinds that I dried over last winter including mineola tangerine and meyer lemon.  From my herb garden I've added sweet woodruff, lemon verbena, lavender, basil, sweet annie and rosemary.

So far I'm loving the process and the romance of it all.  When I was a child my grandmother bought me some cologne that I used as a kind of splash.  I have such fond memories of warm summer nights splashing on her cologne after a bath and going to sleep smelling sweetly.

I'm also enjoying using the fruits of my labor over the years, and feeling like a real apothecary.  I looked around during the process and thought that it looked like a film set of an apothecary at work, yet it wasn't contrived at all.  I find I'm repeating to myself, "oh, true apothecary".

Cocktail Lab, Summer 2012

When Lucy Raubertas, the writer behind Indieperfumes and the inspiration for the Clarimonde Project, asked me if I'd be interested in conjuring up some cocktails for a book release party for a perfume writer I had to say yes.  The connection between fragrance and cocktail crafting has become somewhat seamless lately.  My liquor cabinet is overflowing with fragrant tinctured vodkas, some of which have wound up in a few of my cologne experiments this summer.

After some seriously delicious cocktails at NoMad with Lucy, the author Alyssa Harad, and Maria McElroy of Aroma M Perfumes it was decided that Maria and I would come up with two cocktails based on two of her perfumes.  She decided on Geisha Blanche and Geisha Green, Blanche being a fresh, summery fragrance of white flowers and lychee, while Green is a creative take on absinthe, although mellowed with black currant, mandarin and violet.

After our first meeting we had a general idea of how the two drinks would be and had a list of possible ingredients to have on hand for Cocktail Lab.  I brought in veteran Lab assistant Lori Firpo to sit in with Maria, Lucy and I.

For Geisha Blanche we settled on lychee vodka to start.  After struggling to find a good mixer that would still fit the fragrance profile we settled on champagne with a little lychee juice.  We decided on tuberose and jasmine to mimic the white flowers in the perfume which are added to the drink as well as misted over the top before serving.  We call it First Blush

Black currant vodka was the basis for our rendition of Geisha Green.  Boylan's Creme Soda was the perfect compliment and picked up the tonka note in the perfume beautifully.  Wormwood and the natural isolate alpha ionone (with the characteristic scent of violet) were added to tone down the sweetness of the drink and pick up the absinthe notes of the perfume.  Meet Jaded!




First Blush

one jigger lychee vodka
one generous jigger lychee juice (Ceres brand)
one jigger champagne
two drops tuberose dilution, 5%
spray of tuberose and jasmine
Combine the vodka, juice and dilutions in a shaker, mix well and add champagne.  Pour into a martini glass and spray with tuberose and jasmine.




Jaded

one jigger black currant vodka
two ounces Boyland Creme Soda
one drop alpha ionone dilution, 10%
one drop wormwood dilution, 5%
Combine the ingredients in a cocktail shaker, shake well and serve strained in a martini glass. 




Black currant vodka is made by finely chopping 1/3 cup dried black currants and pouring one cup of vodka over them in a jar with a tight fitting lid.  Shake daily and macerate for up to one month.  Strain and store in an airtight bottle.

Lychee vodka is made by peeling and chopping 1/3 cup fresh lychees (including any juice) and placing them in a jar with a tight fitting lid.  Pour one cup vodka over and shake daily for up to two weeks.  Strain and store.

I'm so pleased to announce the latest perfume offering from Alchemologie, Moonrise.

When Pam Grossman of Observatory Room approached me to create a perfume for a group show based on the moon I agreed on the condition that she collaborate with me on it.  I walked away wondering, "Ok, now, what does the moon smell like".  When Pam and I sat down to begin she brought with her a list of plants that were historically said to be connected to the moon.  The most obvious place to start on that list was with an artemesia, inspired by the Greek goddess, Artemis, who represents the new moon.  Artemis is portrayed in the fragrance by a few spare drops of wormood in the top note, supported by bergamot and petitgrain.  The heart of the perfume is made of luminous jasmine, honey absolute and balanced with rose.  Sandalwood, frankincense and oak moss form the base chord.  The finished perfume, Moonrise, made it's debut at the opening of Lunation:  Art on the Moon on January 7th.  Two lunar inspired cocktails I created were served at the event, The Honeymoon (oat and honey soaked vodka with milk and sandalwood oil) and Dark Side of the Moon (tangerine spiked vodka with homemade creme de cacao and jasmine).

Two New Cocktails Inspired by the Moon

For the group art show, Lunation:  Art on the Moon, I've come up with two new lunar inspired cocktails.  The Honeymoon, a milk and honey concoction spiked with sandalwood oil, and Dark Side of the Moon, a chocolatey tangerine libation accented with jasmine oil.

The Dark Side of the Moon is made with homemade tangerine vodka which is incredibly easy to make.  The most difficult part is shaving the fragile fragrant peel of the fruit while not taking the bitter pith with it.   I used the skin of one Satsuma tangerine per cup of vodka.  Simply place the peel and vodka in a jar and give it a good shake every few hours and it should be ready in under 24 hours.  Strain out the peel and you're ready to tend bar.


The recipe also calls for homemade creme de cacao.  The store bought variety with it's synthetic chocolate flavor might work but once you've had the real thing you can't conceive of drinking the adulterated version.  

Creme de Cacao
one cup sugar
two cups water
one ounce unsweetened chocolate
one half teaspoon vanilla
one cup vodka

In a medium pan combine sugar and water.  Boil on medium high heat until the mixture is reduced to half its original volume, about 20 minutes.  About five minutes before the syrup is done melt chocolate in a two cup or larger container.  Immediately and very slowly pour hot syrup into the melted chocolate, stirring vigorously while pouring.  If mixture is not completely smooth and blended beat with a  mixer or in a blender.  Cool mixture for 30 minutes.  Add vanilla and vodka.  Blend well.  Immediately pour into a clean sterile bottle or jar with a tight fitting lid or cap.


The secret ingredient of Dark Side of the Moon is the drop of jasmine absolute, diluted to 5% strength.  Jasmine has long been associated with the moon and adds a narcotic floral body to the cocktail.

Give the combined ingredients a good shake and strain into a chilled martini glass, or serve over ice. 






The Honeymoon is made with homemade oat and honey vodka made by soaking rolled oats and honey in vodka for three weeks.  To make one cup of vodka use a half cup of rolled oats and a scant quarter cup of honey.  There are many varieties of honey so pick one you like, preferably a milder one.  Shake it all up in a clean sterile jar and macerate in a cool dark place and make sure to give it a good shake daily.  Filter through a paper coffee filter into a clean bottle.  Straining can be a little challenging so be patient.

The Honeymoon also calls for sandalwood oil in a dilution of 10%, and a teaspoon of Chamomile Water.

A New Perfume for Lunation: Art on the Moon

Observatory Room is hosting it's first ever group-curated show, Lunation:Art on the Moon. 

Artists and scientists have always been attracted to the moon…

Our closest celestial neighbor, the earth’s little sister, the moon creates the tides and illuminates the woods at night. For centuries, humanity believed the moon provided a key into the invisible realm: it called out the beast within us, freeing us to act as wolves, to run, to dance, to chant—and sometimes (as in Duncan Jones’ Moon) to split in two, to find our double, our changeling moon-self.

Is the moon home to life? Today we know it isn’t, but even as of 1830, speculation was rampant that the moon was inhabited by Christianized bat-people who worshiped in great ziggurats. (See The Sun and the Moon by Observatory alumnus Matthew Goodman for details.) Still, life comes to the moon. We know the moon contains frozen water, and we dream of using it as our jumping-off point for visiting even more alien vistas.

Down here, despite all the prowess and nuance of our latest telescopes, earthlings still look up naked-eyed with excitement at the full moon. Lovers and children gaze up at its slowly blinking façade in mute wonder. Artists portray the moon as a source of danger and power, and latter-day sorceresses and men of magic call up to that heavenly lamp, seeking to transcend the ordinary night. For them, the old myths have not changed so much: the moon is still a secret mirror, showing in pale light how the familiar contains always an element of the unexpected…

Herbal Alchemy will be participating in the show by offering up a new perfume for the occasion, Moonrise.  The Greek goddess, Artemis, who represents the new moon, is portrayed in this fragrance by the addition of wormwood (an artemesia) in the top note, supported by bergamot and petitgrain.  Luminous jasmine forms the basis of the heart along with honey and rose, and sandalwood and frankincense form the base chord.

Tinctures, Extracts and Infusions

This season has me wanting to capture as much of it's flavors and fragrances as I possibly can.  After my recent trip to California to learn more about natural perfumery I've been hungry to gather new fragrant ingredients.  I thought I might tincture a few things to add to my perfume organ.

I started with trying to capture the incredible, brief and elusive fragrance of linden.  Where I live in Brooklyn there are many linden trees and there is a two week period at the end of June that is phenominaly fragrant.  I recently bought a bottle of linden CO2 from Aftelier and have been playing around with it.  It's a beautiful note, very honeyed and sweet but a bit difficult to work with since it's so easy to lose the quintessential quality of it.  I wondered how a tincture would be so I picked some blossoms and left them to dry for a day or two before I submerged them in 190 proof vodka.  After a few days I strained it out and replaced the blossoms.  It's now on it's third infusion.  I shake it daily and dab a bit on my wrist.  At first it's grassy and more like hay but dries down more like the scented June air.

In my community garden plot I have a patch of chocolate mint that's out of this world.  I've used it in the past to make tea and was pleased but not as fanatical about it is as I've been since last summer when I made some chocolate mint vodka out of it.  The chocolate really comes through when it's macerated.  I've been conjuring cocktails (along with the rest of the civilized world) the past couple of years but I don't even mix this with anything else.  It's so good just on it's own.  I wondered if I could make an extract of it to flavor other things, like seltzer or ice cream.  I chopped up a bunch very fine and put it in a jar and covered it with 190 proof alcohol.  It very quickly turned bright green.  I shook it daily and yesterday strained off the emerald green liquid and used it to make chocolate mint seltzer.  It's delicious but I'm not satisfied so I picked more mint last night and have added it to the extract - a double maceration.

Now my interest is piqued and I've been exploring some other materials to tincture.  Dried jasmine blossoms have yielded a surprising result, more like cigarette burning than the indolic and intoxicating fragrance I expected.  I've also been playing around with tea.  I had some peach flavored black tea in the house and started with that.  It's made the most exquisite elixir, I want to slather myself in it.  A recent trip to the tea store and I now have Lapsang Souchong, Jasmine and Russian Caravan soaking.

              Basically all you do is make sure you have clean jars and good strong vodka (190 proof is best).  Fresh plant material is best dried a day or two so that there is less water involved in your creation.  Chop herbs finely and put in the jar and pour in just enough alcohol to cover.  Make sure that everything is submerged in alcohol or you run the risk of spoilage and ruining your experiment.  Shake the jars daily.  You can double the maceration if you're so inclined.  As always keep good notes so if you create something heavenly you can create it again. Cocktail Alchemy - A Workshop

"Alchemy is the art of transmutation, of taking the rough and raw and rendering it more precious" writes Pam Grossman, curator of the group art show, Alchemically Yours.  To celebrate the closing of the show at the Observatory Room in Brooklyn I'll be hosting a Cocktail Workshop featuring some alchemically transmuted elixirs.  Simple vodka will be transformed by a little herbal magic and then successfully rendered into delicious (and possibly even nutritious) cocktails.  Chocolate mint, angelica and lemon verbena vodka (among others) will be available to sample as well as the cocktails they inspire.  The Sprite, The Kashmere and The Black Dog are a few of the libations that will be passed around to tickle your palette.

I'll be using essential oils and absolutes from my natural perfumer's collection to add a unique accent to the drinks.  The oils have been diluted so that only one drop is necessary to give the cocktails an original and uncommon flavor. Some of the flavors include jasmine, yuzu, blood orange, black pepper and petitgrain.  Floral Waters such as Chamomile Water also make an an unexpected appearance.

The show is running until June 12th at the Observatory Room, 543 Union (at Nevins).

Better late than never!  I've been remiss in posting the recipes for the last batch of cocktails, so without further ado:

The Arrow
