One of my favorite parts of my job is doing custom consultations where clients come to my studio and together we create their signature scent.  I enjoy working one on one with people to create something truly unique for them.  I've kept all of the notes and the formula from our meeting and am now offering some lovely options for refills of your bespoke fragrance.

Capturing the Fragrance and Flavor of Winter

The spring thaw is upon us.  The icebergs are melting, the sidewalks are passable again and the smell of thawing earth and sap rising are in the air. This time of year is always a little melancholy for me. I love winter, no matter the cold and snow, I love it. I'm a big fan of warm and cozy.  I love the holidays, love snow days, thick blankets, warm stews and soft cashmere sweaters (and socks, cashmere socks are the best). I'm going to miss it in the long warm, muggy, glaring, big, fat summer ahead.  Most people talk about capturing the flavors of summer to be used during the cold, lean months.  I do my share of that, mostly so that I can enjoy the winter that much more, but just to turn things on their ear I've been trying to capture the flavors and fragrance of winter to be enjoyed during the summer.

What are the flavors I love most in winter?  That's easy.  Juicy, fresh citrus fruits, roasted nuts, and cups and cups and cups of milky black tea.  So that's what I've attempted to capture. I've made extracts of tangerine, blood orange, meyer lemon, vanilla/orange, toasted almond, hazelnut and pistachio and peach, blackcurrant and vanilla black tea.  Thinking ahead to chocolate ice cream with blood orange extract, or pistachio ice cream amped up with a bit of extract and glasses of cold seltzer with carbonated bubbles popping peach tea extract.

I've also started zesting my citrus before I peel them and drying the zest.  It's nice to have home cured rinds for recipes.  You can zest any type of orange, lemon or lime - or anything else you can get your hands on like yuzu or buddah's hand.  I lay them on parchment covered wicker trays but even laid out evenly on a dinner plate works. Leave them at least a week, depending on humidity, before you put them in a jar to keep. Make sure they're absolutely dry before you do, any hidden moisture could cause your rinds to mold.  On the other hand don't leave them out too long or they'll lose their potency. Don't forget to label them, you'll want to remember which is tangerine and which is blood orange, especially as they dry and their flavor concentrates.

So, while it's still winter take advantage of the fruits of the season and keep them for the warm seasons to come.  If preparing them seems too mind-boggling and time consuming check out the selection of extracts in my Etsy store.  Everything is made in small batches so there is a limited supply. I love to tinker and experiment so expect some new arrivals.

Interview in the Park Slope Food Coop's Linewaiter's Gazette

Laugh if you want but my food coop is badass.  We have 16,000 members working cooperatively to run a store based on good politics, good value and great food.  We members of the Park Slope Food Coop all work a two and a half hour shift every four weeks and with the help of our paid staff we run the coop. We are a model for cooperation and sustainability.

The coop has its share of critics.  There are people who think there are too many rules and find it punitive.  There are only two rules I'm aware of.  One is to show up for your assigned shift, or at least call and let them know you're not coming.  That seems reasonable considering we're trying to run a store.  If you don't call in you have to do a second make-up shift.  This is also reasonable - there has to be a deterrent to not showing up or finding someone to cover your shift.  The other rule is don't shop in line. That just seems like common courtesy.

Every time someone from The New York Times writes about us they always make fun of our organic food and "all of those rules" and the way we check out or the long lines.  Every article is the same, let's make fun of the vegan hippies.  I'm waiting for someone to write an article about what a miracle it is that 16,000 people can work cooperatively to provide ourselves with sustainable organic food at reasonable prices.  There's the real story.

Fragrance Parties and Private Classes

A private class in my home studio.
I've been asked to do quite a few private classes and perfume parties this past season.  I'm getting calls from a lot of brides (and bridesmaids) to book showers and bachelorette parties and some event planners have gotten in touch to book private affairs.  I was recently hired to do a private party in a 42nd floor three bedroom penthouse suite at the Ritz Carlton.  Some days I just love my job!

Sol de la Foret

Sol de la Foret, my newest fragrance, is a true labor of love.  After falling head over heals with the fragrance family, fougere, I set out to make my own.  To be a true fougere a perfume must contain a coumarin note, oakmoss and lavender.  Coumarin was the first synthetic chemical created in a laboratory in 1886 and was the principal ingredient in Houbigant's Fougere Royale, since considered the industry standard.  Coumarins are found in abundance in materials like tonka bean, sweet clover, flouve and deertongue.  It is also found, rather surprisingly, in lavender.

For this creation I've used a generous amount of rich caramelic tonka bean.  To give it a greener, mossier and more coumaranic note I also added sweet clover, a new favorite of mine.  I used a bit of fossilized amber, a tree resin that is millions of years old from  high in the Himalayan Mountains, in the bottom to add a dry smokey quality to the earth element of the blend.  It dries down very soft and sweetens adding a slight powdery note at the bottom - along with great fixation.  Tobacco and Vanilla CO2 add some warmth to the whole bottom.  Following the rules of the true genre there is also the addition of oakmoss, adding a wet roots and leaves note to the forrest floor.  Those sensitive to oakmoss be warned.

At the heart of the perfume is a lovely synergy of carnation and lavender absoutes with a touch of clary sage and orange blossom concretes.  Tunisian neroli was a perfect match for high linalool ho wood at the top, with just a drop of blood orange.

Base:  tonka bean, sweet clover, oak moss, fossilized amber and tobacco absolutes with vanilla CO2

This perfume comes beautifully packaged in a brown velvet envelope in a gold box with a vintage velvet millinery leaf nestled inside.  No markings of any kind have been made to the box or velvet envelope so that they bay be reused (or regifted as the case may be).  The leaf is your keepsake, that and the lingering fragrance.

Fougere Workshop


The fragrance family known as the fougere is a fantasy concept meant to capture the scent of the natural habitat of ferns - the forest floor.  The principal notes are oakmoss, tonka bean and lavender. In this workshop we’ll be sampling Fougere Royale and Jicky, the instigators of this fragrance family, as well as a careful selection of the botanical world’s best perfumers.  Each student will create two perfumes using a collection of oils I’ve assembled for the the occasion including tonka bean, sweet clover, hay and a selection of lavender essential oils, absolutes and concretes.  This will also be an opportunity to work with a few rare and precious oils such as orris root, ambrette, choya nak, ho wood, buddahwood and wild sweet orange.

Midnight Garden

My newest perfume, Midnight Garden, is the joint creation of the lovely women of The Robert Allen Group and myself.  The Group has designed a new line of fabrics inspired by hanging orchids, twisting vines and hidden temples.  What they described to me was a rainforest, with orchids hanging in the trees, thick with fragrance in the night air.  Wild sweet orange, petitgrain and coriander CO2 greet the nose, sitting on top of a jasmine, neroli and honey heart.  At the bottom of this sultry midnight perfume is the vanilla orchid with peru balsam and oakmoss to finish.

A Little Love from CBS!

Berkeley in Bloom

  

I'm just back in town from a wonderful weekend in Berkeley, CA where I attended a natural perfume workshop with the extremely talented Mandy Aftel.  The whole fragrance experience began for me on the first day of my trip spent wandering the streets of North Berkeley.  Everywhere I turned I was astonished by fragrant blooms.  Thick brackets of jasmine hung thickly all over the neighborhood, and roses the size of cabbages wafted their aromas on the breeze.
  

Berkeley Rose Garden

I discovered the Berkeley Rose Garden, perched high on a hill with an incredible view of the Bay and Golden Gate Bridge.  It was a literal amphitheater of roses.  I was very fortunate to visit the area during peak rose season.  Every rose smell differently and it was a wonderful way to prepare my nose for my upcoming workshop in perfumery.
